We had serious rodent issues on our farm, the rats were a serious threat to our chicks and they were not afraid of anything.  After installing the traps, within two days I managed to fill an entire box with them and we didn't have to worry about them anymore. We rebuilt after Ian. Do we still need termite protection?

Yes, and possibly more than before. A rebuild does not change the soil conditions around the structure, and new or repaired framing is no less attractive to termites than old. If a soil treatment was part of the rebuild, check what warranty came with it, because those are often short and do not renew on their own.

Why do we get so many rats in the oaks here?

Because the canopy is a route. Roof rats travel branch to branch and enter at the roofline rather than the ground, so a property with oaks touching the roof has an access point regardless of how well the ground level is sealed. We remove them, seal the entry points, and tell you which branches are the problem.
